This is a razor-sharp Japanese kitchen knife 180mm blade with a lightweight design combined with a brightly coloured resin handle. The Kiritsuke knife is a traditional Japanese all-purpose chef’s knife that resembles a sword. The sharp edge allows it to cut sushi and sashimi like a Yanagi, and the wideness of the blade gives it the dexterity to do multiple jobs.

- A good cutting board will help retain a sharp edge for substantially longer. Softwoods, such as teak, are preferred.

- Use a sharpening stone, not honing steel, to re-sharpen your knives.
- It is best to store your blades in a wooden block, in-drawer knife tray, sheath, or knife case. Do not store your knives unsheathed in a drawer.
